Uncapping: hot knife, cold knife, or fork — what do you actually reach for?

Fifth season in Małopolskie, about to extract my main crop and questioning my setup. I own an electric hot knife but honestly I keep going back to a plain serrated bread knife plus a capping scratcher for the low spots. The hot knife is fast on flat, fully drawn comb, but the moment the comb is uneven it skates over the low patches, and if I linger it caramelises the honey — you can smell it. The bread knife with a sawing motion feels slower but cleaner, and the fork gets everything the knife missed. So what's everyone actually using once the romance wears off? Anyone gone the other way — from cold knife to hot and never looked back? And does anyone bother with the heated uncapping planes, or are those for the 50+ hive crowd?

14 years, ~40 colonies: cold serrated knife dipped in hot water, two knives alternating in the water bath. All the speed of a hot knife, none of the burnt honey smell. The electric knife lives in a drawer since 2019.

Opposite camp here — hot knife for everything, but the trick is keeping it moving and letting the weight of the knife do the work, never pressing. Skating over low spots doesn't bother me because the fork pass takes 10 seconds per frame anyway. On 30 hives the speed difference is real.

Just a capping scratcher for me, nothing else — 8 hives, and I extract over two evenings so speed isn't the issue. Bonus is the cappings come off as little flakes with almost no honey attached, so there's less to drain. Wouldn't scale past maybe 10 hives though.

Ran uncapping planes for a few seasons at 150+ hives — yes, they're for volume, and they want very evenly drawn comb to shine. For under 20 hives MieleMarco's two-knives-in-hot-water method is honestly the sweet spot. Cheap, fast, no cord.
