Goldenrod flow is 3-4 weeks out — do you leave a super on for it or let the bees keep it all?

Fifth year in Quebec, seven hives. Summer supers came off last week, and now comes my annual dilemma: the goldenrod (and aster behind it) will start here around late August and can be a genuinely strong flow when we get rain, which we have. Options as I see them: leave one empty super on the strong hives and take a fall crop, or leave nothing and let them pack the brood boxes for winter, feeding less later. For anyone who harvests it — first-timers should know goldenrod honey coming in smells like a locker room. Sweaty gym socks. It's completely normal, the smell fades as it cures, and the honey itself is fine (dark-ish, a bit spicy). The first year I smelled it I thought something had died in the hive. It also crystallises fast, which matters for both bottling and wintering. So: who supers for goldenrod and who leaves it? Does fast-crystallising fall honey cause anyone winter problems, or is that overblown?
