Christmas market pitch in five weeks — what mix of jar sizes, wax and gift packs actually sells?

Alentejo, sixth year. I've taken a pitch at a Christmas market for the first time — three days in early December in a town square — and I need to decide what to bring and in what quantities. What I'm planning, and I'd like to be argued out of any of it. Mostly 250 g jars as the volume seller. A smaller number of 500 g for people buying for themselves. Some very small jars, maybe 40-50 g, as stocking fillers and to let people try the medronho without committing. Beeswax candles, which I'm told sell better in December than at any other time. And maybe twenty gift boxes with a jar, a candle and a wax wrap, priced as a set. My questions for people who do winter markets. What's the right ratio of small to large? Do gift boxes actually sell or do they sit there looking pretty while people buy the components separately? Is it worth bringing the dark bitter honey at all, or does a Christmas crowd only want familiar sweet honey? And how much do you bring in total for three days — I have no feel for the volume and I'd rather not run out on day one or cart most of it home.
