Rosemary honey crystallised in 6 weeks — way too fast?

Pulled a rosemary monofloral in April, jarred and stored cool. By June it had crystallised into solid white blocks. Buyers are asking if it's gone bad. Is this normal for rosemary honey?

Yes, totally normal — rosemary has a high glucose:fructose ratio so it crystallises fast and fine. That's actually a quality marker for genuine rosemary monofloral.

Educate your buyers — rosemary 'cream' is the premium product in much of Europe. You can warm-stir to make it spreadable and sell it as creamed honey. Bigger margin than raw.

Same with sunflower — crystallises in weeks. Customers expect it once you tell them. The ones who want clear honey want acacia or chestnut, not rosemary.
